Thanks to a cute parent volunteer in my classroom... Tuesday has officially become Taco Tuesday at the Evans' home. She passed on this delightful, cheap and yummy deal at Del Taco on Tuesdays. The drive through is slick on the way home... we add a little Spanish Rice and chips and salsa... and dinner is done! Yeah, Tuesday!!

Spanish Rice

6 slices of chopped cooked bacon

1 cup of uncooked Uncle Ben's Rice

1/4 cup ketchup

1/4 cup chopped green pepper

1 chopped onion

1 can stewed tomatoes

1 t salt

1/2 t pepper

2 cups water

Brown bite size pieces of bacon, add rice and other ingredients.

Simmer 30-40 minutes.

I believe this is one of my Aunt Jodee's recipe. It's one of my favorite!
